Why strawberries are so hard
Three biological facts drive the difficulty:
- Respiration rate — strawberries respire 2–3× faster than mangoes, 5× faster than onions. Metabolic heat builds up fast in a palletised pack without active cooling.
- Bruise sensitivity — surface damage at harvest accelerates decay exponentially; even a clean-looking bruise reaches retail shelves as a grey-pink soft spot within 48 hours.
- Narrow temperature window — commercial storage target is 0–2 °C. Below −0.5 °C causes freeze damage; above 4 °C accelerates Botrytis (grey mould) by ~40% per °C.
This is why every Egyptian strawberry programme that survives retail QC runs through a protocol chain that's essentially zero-tolerance on temperature excursions. The three failures below are where that protocol breaks.
Pre-cooling delay > 2 hours from pick to +2 °C
Field heat on a Beheira strawberry at 10am in January is typically 15–18 °C. That's a 13–16 °C gap from the +2 °C shipping setpoint. Every hour of delay in closing that gap doubles the downstream Botrytis risk. The two-hour rule exists because hydrocooling or forced-air-cooling takes 30–45 minutes; field transport from picker to packhouse takes 45–60 minutes; plus administrative time. Any slip over 2 hours and you're already behind the curve.
Transit temperature excursion at customs handover
Reefer containers are tightly controlled. Air-freight pallets are not. The single riskiest moment in the Cairo-to-Rotterdam chain is the 30–120 minutes between the cargo-terminal cold-store and the aircraft hold, where palletised strawberries sit on the tarmac or in a transit shed at ambient temperature. Summer Cairo ambient is 35–40 °C. If pallet wrap is compromised, the core of a 1-tonne pallet reaches +10 °C within 90 minutes. Destination QC sees "soft, leaking, high Botrytis count" but the damage was done 4,000 km and 12 hours earlier.
Arrival handling — the 45-minute shelf-to-shop window
The buyer-side mistake that causes the most heartbreak. Strawberries land at Rotterdam / Jebel Ali / Tashkent at +2 °C. If they're not in a cold-room within 45 minutes of offload, the core warms to +6 °C and the Botrytis count spikes. Retail QC rejects. Buyer blames the supplier. The supplier's thermal logs prove the product arrived in spec. Result: blame game, strained relationship, and the buyer switches origins next season when the real issue was their destination logistics.
